1/4 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons lemon zest
4 cloves garlic, minced
1 tablespoon honey
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 1/2 pounds boneless, skinless chicken breasts or thighs
Instructions
In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, honey, oregano, salt, pepper, and paprika.
Place the chicken in a large resealable plastic bag or shallow dish.
Pour the marinade over the chicken, ensuring it is well coated.
Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-4 hours for deeper flavor.
Remove chicken from marinade and cook by grilling, baking at 400°F (200°C) for 20-25 minutes, or pan-frying until fully cooked.
Notes
Do not reuse marinade unless it’s boiled for food safety.
Marinating overnight will yield the most flavorful and tender chicken.
This marinade also works well with shrimp or vegetables.
