Lemon Kale Caesar Salad is a fresh, flavorful twist on the classic Caesar. It features tender massaged kale, a bright lemony Caesar dressing, crunchy croutons, and shaved Parmesan. It’s simple, satisfying, and perfect as a side or light main dish.

Ingredients

For the Salad:

  • 1 large bunch curly kale, stems removed and chopped (about 6 cups)

  • 1 tablespoon olive oil (for massaging)

  • 1/4 teaspoon salt

  • 1 cup croutons

  • 1/3 cup shaved or grated Parmesan cheese

  • Fresh cracked black pepper (to taste)

For the Lemon Caesar Dressing:

  • 1/4 cup mayonnaise

  • 1 tablespoon Dijon mustard

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 teaspoon Worcestershire sauce

  • 1 garlic clove, minced

  • 2 tablespoons grated Parmesan cheese

  • 1–2 tablespoons water (to thin, if needed)

  • Salt and black pepper, to taste

Instructions

  1. Massage the Kale:
    Place chopped kale in a large bowl. Add olive oil and salt. Massage the kale with your hands for 2–3 minutes until it becomes tender and darker in color.

  2. Make the Dressing:
    In a small bowl or jar, whisk together mayo, Dijon, lemon juice, zest, Worcestershire, garlic, and Parmesan. Add a splash of water to reach your desired consistency. Season with salt and pepper.

  3. Assemble the Salad:
    Pour dressing over the massaged kale and toss to coat. Top with croutons, shaved Parmesan, and a few cracks of black pepper.

  4. Serve:
    Serve immediately or refrigerate for up to 30 minutes before serving.

Notes

  • Add grilled chicken, shrimp, or chickpeas for extra protein.

  • For a lighter version, swap some or all of the mayo with Greek yogurt.

  • Use store-bought Caesar dressing in a pinch, but add extra lemon for brightness.
