Lemon Lime Soda Cupcakes are light, fluffy, and bursting with citrus flavor thanks to the addition of lemon-lime soda. These easy-to-make treats are perfect for parties, picnics, or anytime you want a fun twist on classic cupcakes.

  • 1 cup lemon-lime soda (like Sprite or 7UP)
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • 1 cup butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 2 tablespoons lemon-lime soda (for frosting)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Lemon and lime slices or zest, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, combine cake mix, lemon-lime soda, oil, eggs, lemon zest, and lime zest. Mix until smooth.
  3. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  4. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  5. For the frosting, beat butter until light and fluffy. Gradually add powdered sugar, lemon-lime soda, vanilla, and a pinch of salt. Beat until smooth and creamy.
  6. Frost cooled cupcakes and garnish with lemon or lime zest or slices if desired.
