12 oz spaghetti or linguine
2 tablespoons olive oil
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Zest and juice of 1 large lemon
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in lemon juice, zest, and Parmesan cheese. Simmer for 2-3 minutes until slightly thickened.
Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat. If needed, add a splash of reserved pasta water to loosen the sauce.
Serve immediately, garnished with chopped parsley and extra Parmesan if desired.
Notes
Use fresh lemon juice for the best flavor.
For a lighter version, use half-and-half or milk instead of heavy cream.
Add grilled chicken or shrimp for a heartier meal.
