  • 1 large egg
  • 1 tbsp lemon zest (about 1 lemon)
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • ½ tsp lemon extract (optional, for extra lemon flavor)
  • ½ cup granulated sugar (for rolling)

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.

Step 2: Cream the Butter & Sugar

  1. In a large bowl, beat butter and sugar together until light and fluffy (about 2 minutes).
  2. Add egg, lemon zest, lemon juice, vanilla extract, and lemon extract (if using). Beat until smooth.

Step 3: Combine & Chill

  1. Gradually mix in the dry ingredients until just combined.
  2. Cover and chill the dough for 30 minutes (optional, but helps with rolling).

Step 4: Roll & Bake

  1. Roll dough into 1-inch balls, then roll in granulated sugar to coat.
  2. Place cookies 2 inches apart on the prepared baking sheet.
  3. Bake for 8–10 minutes, or until edges are set but centers are soft.
  4. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Step 5: Serve & Enjoy

  1. Enjoy warm or store in an airtight container for up to 5 days.
