These no-bake lemon truffles are smooth, creamy, and bursting with bright citrus flavor—perfect for spring parties, gifts, or a sweet bite-sized treat.

Ingredients

  • 1 package (14 oz) sweetened condensed milk
  • 1/2 cup white chocolate chips, melted
  • 1 tbsp lemon zest
  • 1/4 cup fresh lemon juice
  • 2 1/2 cups finely crushed vanilla wafers or graham crackers
  • 1/2 tsp vanilla extract
  • Powdered sugar or shredded coconut (for rolling)

Instructions

  1. In a medium bowl, combine sweetened condensed milk, melted white chocolate, lemon zest, lemon juice, and vanilla extract. Mix until smooth.
  2. Stir in the crushed vanilla wafers until a soft dough forms.
  3. Refrigerate mixture for 1–2 hours, or until firm enough to roll into balls.
  4. Using a tablespoon or cookie scoop, roll the mixture into 1-inch balls.
  5. Roll truffles in powdered sugar or shredded coconut to coat.
  6. Store in an airtight container in the refrigerator until ready to serve.

  • Use fresh lemon juice and zest for the best flavor.
  • Chill the mixture thoroughly to make shaping easier.
  • These truffles also freeze well for up to 1 month.
