1 package (14 oz) sweetened condensed milk
1/2 cup white chocolate chips, melted
1 tbsp lemon zest
1/4 cup fresh lemon juice
2 1/2 cups finely crushed vanilla wafers or graham crackers
1/2 tsp vanilla extract
Powdered sugar or shredded coconut (for rolling)
Instructions
In a medium bowl, combine sweetened condensed milk, melted white chocolate, lemon zest, lemon juice, and vanilla extract. Mix until smooth.
Stir in the crushed vanilla wafers until a soft dough forms.
Refrigerate mixture for 1–2 hours, or until firm enough to roll into balls.
Using a tablespoon or cookie scoop, roll the mixture into 1-inch balls.
Roll truffles in powdered sugar or shredded coconut to coat.
Store in an airtight container in the refrigerator until ready to serve.
Notes
