This simple and zesty lemon vinaigrette is perfect for salads, roasted vegetables, or as a marinade. It combines fresh lemon juice, olive oil, and a few key ingredients to create a refreshing dressing that’s easy to whip up in minutes.

Ingredients

Scale
  • 60 ml (1/4 cup) fresh lemon juice (about 2 lemons)
  • 120 ml (1/2 cup) olive oil (extra virgin for best flavor)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced or finely grated
  • 1 teaspoon honey or maple syrup (optional, for a touch of sweetness)
  • Salt and freshly ground black pepper, to taste
  • Zest of 1 lemon (optional, for added flavor)

Instructions

  1. Combine the ingredients:
    • In a small bowl or a jar with a tight-fitting lid, add the lemon juice, Dijon mustard, garlic, honey (if using), salt, and pepper.
  2. Emulsify the vinaigrette:
    • Gradually whisk in the olive oil while continuously stirring, or shake vigorously if using a jar, until the mixture is well combined and slightly thickened.
  3. Taste and adjust:
    • Taste the vinaigrette and adjust the seasoning with more salt, pepper, or honey if needed.
  4. Serve:
    • Use immediately, or store in the refrigerator for up to a week. Shake or whisk before using if the oil has separated.

Notes

  • For a creamier vinaigrette, blend the ingredients in a food processor or blender.
  • You can customize the flavor by adding herbs like thyme, basil, or parsley.
  • This vinaigrette pairs well with green salads, grilled vegetables, or as a drizzle for fish or chicken.
