A deliciously rich and chewy Liège waffle with caramelized pearl sugar, perfect for breakfast or dessert.

  • 1/3 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 3/4 cup whole milk, lukewarm
  • 2 large eggs
  • 1 cup unsalted butter, softened
  • 1/2 tsp salt
  • 1 tbsp vanilla extract
  • 1 1/2 cups Belgian pearl sugar

Instructions

  1. In a bowl, combine lukewarm milk and yeast. Let it sit for 5-10 minutes until foamy.
  2. In a stand mixer, mix flour, granulated sugar, and salt.
  3. Add the yeast mixture, eggs, and vanilla extract. Mix until a dough forms.
  4. Add softened butter gradually, mixing until fully incorporated. Knead for about 5 minutes until smooth.
  5. Cover the dough and let it rise in a warm place for 1 hour or until doubled in size.
  6. Gently fold in the pearl sugar.
  7. Preheat a Belgian waffle iron. Divide dough into balls (about 3-4 oz each).
  8. Cook each dough ball in the waffle iron for 3-5 minutes until golden brown and caramelized.
  9. Serve warm with your favorite toppings.

  • Use Belgian pearl sugar for authentic caramelized bits.
  • Let the dough rest overnight in the fridge for enhanced flavor.
