These Loaded Cowboy BBQ Tater Tot Nachos (a.k.a. “Totchos”) are a crispy, cheesy, and smoky twist on classic nachos! Crispy tater tots are topped with BBQ pulled pork or beef, melted cheese, crispy bacon, and fresh toppings for the ultimate crowd-pleasing appetizer or meal. Perfect for game day, parties, or a fun family dinner!

For the Base:

  • 1 (32 oz) bag frozen tater tots
  • 1 tbsp olive oil (for extra crispiness)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Toppings:

  • 1 1/2 cups cooked BBQ pulled pork or shredded beef (store-bought or homemade)
  • 1/2 cup BBQ sauce
  • 1 1/2 cups shredded cheddar cheese (or Mexican blend)
  • 1/2 cup cooked bacon (crumbled)
  • 1/4 cup red onion (diced)
  • 1/2 cup pickled jalapeños (optional, for heat)
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sour cream (for drizzling)
  • 1 tbsp fresh cilantro (chopped, optional)


Instructions

Step 1: Bake the Tater Tots

  1. Preheat oven to 425°F (220°C).
  2. Spread tater tots on a large baking sheet and drizzle with olive oil, salt, and black pepper.
  3. Bake for 25-30 minutes, flipping halfway, until golden and crispy.

Step 2: Prepare the BBQ Meat

  1. While the tots bake, warm the BBQ pulled pork or shredded beef in a skillet over medium heat.
  2. Stir in BBQ sauce and let simmer for 2-3 minutes until heated through.

Step 3: Assemble the Totchos

  1. Remove crispy tater tots from the oven and evenly spread BBQ meat over the top.
  2. Sprinkle with cheddar cheese and crumbled bacon.

Step 4: Melt the Cheese

  1. Return to the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.

Step 5: Add Fresh Toppings & Serve

  1. Top with red onions, jalapeños, tomatoes, and green onions.
  2. Drizzle with sour cream and sprinkle with fresh cilantro.
