500 g ground turkey
1 can (400 g) black beans, rinsed and drained
1 packet taco seasoning (about 30 g)
1 small onion, diced
2 cloves garlic, minced
2 tbsp olive oil
300 g tortilla chips
200 g shredded cheddar cheese
100 g shredded Monterey Jack cheese (optional)
1 tomato, diced
1 jalapeño, sliced (optional)
2 tbsp chopped cilantro
½ lime, cut into wedges
Sour cream and salsa, for serving
Instructions
Preheat oven to 200°C (400°F).
In a skillet over medium heat, heat olive oil and sauté onion for 3–4 minutes until softened.
Add garlic and cook for 30 seconds. Add ground turkey and cook until browned.
Stir in taco seasoning and a splash of water, cook for 2–3 minutes.
Add black beans and mix well. Remove from heat.
On a baking sheet, spread tortilla chips and layer turkey-bean mixture over them.
Sprinkle with cheddar and Monterey Jack cheese.
Bake for 8–10 minutes until cheese is melted and bubbly.
Top with tomato, jalapeño, and cilantro.
Serve with lime wedges, sour cream, and salsa.
Notes
Add pickled red onions or avocado for extra flavor.
For a spicier version, use hot taco seasoning or add hot sauce.
