Cheesy Loaded Meatloaf Casserole is a comforting, all-in-one dinner that combines classic meatloaf flavors with creamy mashed potatoes, melty cheese, and crispy bacon. This hearty casserole is the perfect way to feed a crowd and makes a delicious, family-friendly weeknight meal!

For the Meatloaf Layer:

  • 1 1/2 lbs (680g) ground beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup (60g) breadcrumbs
  • 1/4 cup (60ml) milk
  • 2 large eggs
  • 1/4 cup (60ml) ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Mashed Potato Layer:

  • 3 cups (about 4 medium) potatoes, peeled and cubed
  • 1/2 cup (120ml) milk
  • 4 tbsp butter
  • Salt and pepper, to taste

For Topping:

  • 1 1/2 cups (150g) shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, sliced (for garnish)

Instructions

  • Cook the Potatoes:

    • Preheat your oven to 375°F (190°C).
    • Place the cubed potatoes in a pot of salted water. Bring to a boil and cook until fork-tender, about 15 minutes.
    • Drain and mash the potatoes with the milk, butter, salt, and pepper. Set aside.
  • Make the Meatloaf Layer:

    • In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, mustard, salt, and pepper. Mix well until combined.
    • Press the meatloaf mixture into an even layer in a greased 9×13-inch baking dish.
  • Bake the Meatloaf:

    • Bake the meatloaf layer for 20-25 minutes, or until it’s mostly cooked through and the juices run clear.
  • Add the Mashed Potatoes:

    • Carefully spread the mashed potatoes over the partially baked meatloaf layer, smoothing them out evenly.
  • Top with Cheese and Bacon:

    • Sprinkle shredded cheddar cheese over the mashed potato layer, then add the crumbled bacon on top.
  • Bake Again:

    • Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve:

    • Let the casserole cool for a few minutes, then garnish with sliced green onions. Serve hot!

     Use gluten-free breadcrumbs.
