Loaded Smothered Beef Burritos are hearty, flavor-packed tortillas filled with seasoned ground beef, beans, rice, and cheese, then smothered in a rich enchilada sauce and baked to perfection.

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) refried beans
  • 1 cup cooked rice
  • 1 1/2 cups shredded cheddar cheese
  • 1 can (10 oz) red enchilada sauce
  • 4 large flour tortillas
  • 1/4 cup chopped cilantro (optional)
  • 1/2 cup sour cream (for serving)
  • 1/2 cup diced tomatoes or salsa (for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until soft, about 3 minutes. Add garlic and cook for 1 minute.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
  5. Warm the tortillas and spread a layer of refried beans in the center of each.
  6. Add a scoop of rice, then the beef mixture, and sprinkle with cheddar cheese.
  7. Roll up the tortillas burrito-style and place seam-side down in a greased 9×13-inch baking dish.
  8. Pour enchilada sauce over the burritos and top with remaining cheese.
  9. Bake for 15–20 minutes or until cheese is melted and bubbly.
  10. Garnish with chopped cilantro, sour cream, and diced tomatoes or salsa before serving.

Notes

  • Use ground turkey or chicken as a leaner option.
  • Add jalapeños or hot sauce for extra heat.
  • Make ahead and refrigerate or freeze before baking for a quick meal later.
