  • 1 lb chicken tenders (or chicken breasts sliced into strips)
  • 1 large egg
  • 1 tbsp heavy cream
  • ½ cup almond flour
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Cooking spray or olive oil for greasing

Instructions

Prepare the Chicken Tenders:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a greased wire rack for crispier tenders.
  2. Pat the chicken tenders dry with paper towels.

Make the Breading Station:

  1. In a shallow bowl, whisk together the egg and heavy cream.
  2. In another shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

Coat the Chicken:

  1. Dip each chicken tender into the egg mixture, allowing any excess to drip off.
  2. Press the chicken into the almond flour mixture, coating evenly on all sides. Place the coated chicken tenders on the prepared baking sheet.

Bake the Tenders:

  1. Lightly spray the chicken tenders with cooking spray or drizzle with a small amount of olive oil to help them crisp up.
  2. Bake for 20–25 minutes, flipping halfway through, until the chicken is golden and the internal temperature reaches 165°F (74°C).

Serve:

  1. Serve hot with your favorite low-carb dipping sauce, such as ranch, sugar-free ketchup, or a spicy mayo.

Notes

  • Air fryer option: Cook the tenders at 375°F (190°C) for 10–12 minutes, flipping halfway through, for an even crispier result.
  • Make it spicy: Add ½ tsp cayenne pepper or chili powder to the breading for a kick.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain crispiness.
