These Lucky Charms Cookies are soft, buttery sugar cookies filled with colorful Lucky Charms marshmallows. Perfect for St. Patrick’s Day, kids’ parties, or anytime you want a nostalgic, sweet treat!

Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white chocolate chips (optional, for extra sweetness)
  • 1 ½ cups Lucky Charms marshmallows (plus extra for topping)

Instructions

  • Preheat & Prep:

    • Preheat oven to 350°F (175°C).
    • Line a baking sheet with parchment paper.
  • Cream Butter & Sugars:

    • In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  • Add Wet Ingredients:

    • Mix in eggs and vanilla extract, beating until smooth.
  • Combine Dry Ingredients:

    • In another bowl, whisk together flour, baking soda, and salt.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in Goodies:

    • Gently stir in white chocolate chips (if using) and Lucky Charms marshmallows.
  • Scoop & Bake:

    • Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing 2 inches apart.
    • Bake for 9-11 minutes, until the edges are set but the centers are soft.
  • Add Extra Magic:

    • Immediately after baking, press a few extra Lucky Charms marshmallows on top of each cookie.

 

  • Cool & Serve:

    • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
    • Enjoy warm or store for later!

Notes

  • Want a rainbow twist? Add ¼ cup rainbow sprinkles to the dough. 🌈
  • Prefer a crispier cookie? Bake for an additional 2 minutes.
  • Storage: Store in an airtight container at room temperature for 4-5 days, or freeze for up to 3 months.
