These Magic 7-Layer Butterscotch Chip Cookies take all the flavors of classic 7-layer bars and transform them into soft, chewy cookies! Packed with butterscotch chips, chocolate chips, coconut, graham cracker crumbs, and sweetened condensed milk, these cookies are rich, gooey, and completely irresistible. Perfect for holidays, bake sales, or whenever you need a sweet treat!

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup graham cracker crumbs (about 4 crackers, crushed)
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup butterscotch chips
  • ½ cup semisweet chocolate chips
  • ½ cup sweetened shredded coconut
  • ½ cup chopped pecans or walnuts (optional)
  • ¼ cup sweetened condensed milk


Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, and salt. Set aside.

Step 2: Mix Wet Ingredients

  1. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
  2. Add the egg and vanilla extract, mixing until smooth.

Step 3: Combine & Fold in Mix-Ins

  1. Gradually mix in the dry ingredients until just combined.
  2. Fold in butterscotch chips, chocolate chips, coconut, and nuts (if using).

Step 4: Add Sweetened Condensed Milk & Bake

  1. Scoop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Drizzle a small amount (about ½ teaspoon) of sweetened condensed milk on top of each cookie.
  3. Bake for 10–12 minutes, or until the edges are golden brown and the centers are slightly soft.

Step 5: Cool & Enjoy

  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.
  2. Serve warm or at room temperature and enjoy!

Notes

  • Storage: Keep in an airtight container at room temperature for up to 5 days.
  • Freezing: Freeze dough balls for up to 3 months and bake as needed.
