Maine Potato Candy is a classic old-fashioned treat with a fun twist—mashed potatoes! This no-bake confection blends mashed potatoes with powdered sugar to form a soft dough, which is then rolled up with creamy peanut butter for a sweet and salty bite. It’s simple, nostalgic, and always a crowd-pleaser.

  • 1/2 cup plain mashed potatoes (no butter or seasoning)

  • 1 tsp vanilla extract

  • 45 cups powdered sugar, plus extra for rolling

  • 1/2 cup creamy peanut butter

Instructions

  1. In a large bowl, mix mashed potatoes and vanilla extract until smooth.

  2. Gradually add powdered sugar, 1 cup at a time, mixing well after each addition. The dough should become thick, smooth, and easy to roll—similar to cookie dough.

  3. Dust a clean surface with powdered sugar and roll the dough into a rectangle about 1/4 inch thick.

  4. Spread an even layer of peanut butter over the dough.

  5. Carefully roll the dough into a tight log, just like a jelly roll. If it sticks, use parchment paper to help guide the roll.

  6. Wrap the roll in plastic wrap and chill in the fridge for at least 1 hour, or until firm.

  7. Slice into 1/4 to 1/2-inch pieces and serve.


Notes

  • Use plain mashed potatoes—no butter, milk, or seasoning.

  • The dough will seem sticky at first but firms up with more sugar and chilling.

  • Store leftovers in the fridge for up to 1 week, or freeze for longer storage.

  • For a nut-free version, swap peanut butter with sunflower seed butter.
