These Maple Brown Butter Glazed Carrots are a delightful side dish that combines the natural sweetness of roasted carrots with the rich, nutty flavor of browned butter and the warm sweetness of maple syrup. This recipe is simple yet elegant, making it perfect for both weeknight dinners and special occasions.

Ingredients

Scale
  • 1 ½ pounds carrots, peeled and cut into 2-inch pieces
  • 3 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt and freshly ground black pepper, to taste

  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Brown Butter:

    • In a small saucepan over medium heat, melt the butter. Continue cooking, swirling the pan occasionally, until the butter turns golden brown and emits a nutty aroma, about 3-5 minutes. Be careful not to burn it.
  3. Combine Ingredients:

    • Remove the saucepan from heat and stir in the maple syrup and fresh thyme leaves (if using).
  4. Toss Carrots with Glaze:

    • Place the prepared carrots in a large bowl. Pour the brown butter and maple syrup mixture over the carrots, season with salt and pepper, and toss to coat evenly.
  5. Roast the Carrots:

    • Spread the glazed carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring once halfway through cooking.
  6. Serve:

    • Transfer the roasted carrots to a serving dish. Garnish with chopped fresh parsley, if desired, and serve warm.

Notes

  • Carrot Size: If using larger carrots, consider halving or quartering them lengthwise to ensure even cooking.
  • Variations: For added flavor, sprinkle chopped toasted nuts, such as pecans or walnuts, over the finished dish.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
