A flavorful and juicy margarita grilled chicken marinated in lime, tequila, and spices, perfect for summer grilling and a light, zesty meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup tequila
  • 1/4 cup fresh lime juice
  • 2 tablespoons orange juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a bowl, whisk together the tequila, lime juice, orange juice, olive oil, garlic, chili powder, cumin, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them.
  3. Seal the bag or cover the dish and refrigerate for at least 1 hour, up to 4 hours.
  4. Preheat the grill to medium-high heat.
  5. Remove the chicken from the marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before slicing.
  7. Garnish with chopped cilantro and serve with lime wedges if desired.

Notes

  • Do not marinate the chicken for more than 4 hours to avoid over-tenderizing.
  • You can substitute tequila with additional lime juice for a non-alcoholic version.
  • Great served with grilled vegetables or over a fresh salad.
