These margarita grilled shrimp skewers are juicy, citrusy, and full of flavor from a quick marinade made with lime, tequila, garlic, and a hint of spice. They cook up in minutes and are perfect for backyard BBQs, taco bars, or a tropical-themed dinner. Serve with rice, tortillas, or a fresh summer salad!
1 ½ lbs large shrimp, peeled and deveined (tails on or off)
¼ cup fresh lime juice (about 2 limes)
2 tbsp tequila (optional, but recommended)
2 tbsp olive oil
1 tbsp honey or agave nectar
2 garlic cloves, minced
1 tsp chili powder
½ tsp cumin
½ tsp salt
¼ tsp black pepper
¼ tsp crushed red pepper flakes (optional, for heat)
Lime wedges and chopped cilantro, for serving

Make the marinade: In a medium bowl, whisk together lime juice, tequila, olive oil, honey, garlic, chili powder, cumin, salt, pepper, and red pepper flakes.
Marinate the shrimp: Add shrimp to the bowl and toss to coat. Cover and refrigerate for 15–30 minutes (don’t marinate longer or the lime juice will start to “cook” the shrimp).
Preheat grill to medium-high heat. Thread shrimp onto skewers.
Grill the skewers for 2–3 minutes per side, or until shrimp are pink, opaque, and slightly charred at the edges.
Serve: Remove from heat and serve with lime wedges and a sprinkle of cilantro.
No grill? Cook the skewers in a hot grill pan or under a broiler.
Great with a side of cilantro lime rice, over salad, or in tortillas with avocado.
