This easy Marinated Cherry Tomatoes recipe is a fresh and flavorful way to enjoy sweet cherry tomatoes infused with olive oil, garlic, herbs, and a touch of balsamic — perfect as a side dish, salad topper, or appetizer.

Ingredients

Scale
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove, minced
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. In a large bowl, combine olive oil, balsamic vinegar, minced garlic, salt, black pepper, and red pepper flakes if using.
  2. Add the halved cherry tomatoes and toss to coat evenly.
  3. Stir in the chopped basil and parsley.
  4. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 4 hours, to allow flavors to develop.
  5. Stir gently before serving. Serve chilled or at room temperature as a side dish, salad topping, or bruschetta topping.

Notes

  • Use the freshest, sweetest cherry tomatoes you can find for the best flavor.
  • Leftovers can be stored in an airtight container in the fridge for up to 2 days.
  • Try adding crumbled feta or fresh mozzarella for a twist.
