  • 1 tablespoon granulated sugar (or honey)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1 tablespoon fresh parsley or dill, chopped (optional)

Instructions

  1. Prepare the vegetables:
    • Place the sliced cucumbers, tomatoes, and onions in a large bowl.
  2. Make the marinade:
    • In a small bowl or jar, whisk together the olive oil, vinegar, sugar, salt, pepper, oregano, and parsley or dill (if using).
  3. Combine and marinate:
    • Pour the marinade over the vegetables. Toss gently to coat all the ingredients evenly.
  4. Chill and serve:
    • Cover and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld. Toss again before serving.
