These Marinated Mushrooms are tender, tangy, and full of garlicky herb flavor! Made with olive oil, vinegar, fresh herbs, and spices, they’re perfect as a side dish, appetizer, or salad topping. This easy recipe takes just 15 minutes to make and gets even better as it sits!

Ingredients

  • 1 lb cremini or white button mushrooms (trimmed and halved if large)
  • ¼ cup olive oil (extra virgin for best flavor!)
  • 3 tbsp red wine vinegar (or white wine vinegar!)
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard (adds depth!)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano (or Italian seasoning!)
  • ½ tsp crushed red pepper flakes (optional, for heat!)
  • 1 tbsp fresh parsley, chopped (plus extra for garnish!)
  • ½ tsp lemon zest (optional, for brightness!)

Instructions

Step 1: Cook the Mushrooms

  1. In a large pan, heat 1 tbsp olive oil over medium heat.
  2. Add mushrooms and cook for 5-7 minutes, stirring occasionally, until softened and slightly browned.
  3. Remove from heat and transfer to a bowl.

Step 2: Make the Marinade

  1. In a small bowl, whisk together olive oil, vinegar, garlic, Dijon mustard, salt, pepper, oregano, and red pepper flakes.
  2. Stir in lemon zest and parsley.

Step 3: Marinate & Chill

  1. Pour marinade over warm mushrooms, tossing to coat.
  2. Let sit at room temperature for 15 minutes or refrigerate for at least 2 hours for deeper flavor.

Step 4: Serve & Enjoy!

  1. Garnish with extra parsley and serve chilled or at room temperature.
  2. Enjoy as a side dish, appetizer, or salad topping!
