  • 1/2 teaspoon salt

  • 1 cup (80 g) rolled oats
  • 1 cup (170 g) semi-sweet chocolate chips
  • 1/2 cup (60 g) chopped pecans (or walnuts)
  • 1/2 cup (80 g) white chocolate chips (optional, for extra decadence)


Instructions

1. Brown the butter

  1. In a medium saucepan over medium heat, melt the butter. Continue cooking, stirring constantly, until the butter begins to foam and turns a golden brown color with a nutty aroma (about 5–7 minutes).
  2. Remove the butter from heat and pour it into a large mixing bowl. Let it cool slightly for about 10 minutes.

2. Make the cookie dough

  1. Add the brown sugar and granulated sugar to the browned butter. Mix until smooth.
  2. Beat in the eggs, one at a time, followed by the vanilla extract, until fully combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Fold in the oats, semi-sweet chocolate chips, white chocolate chips (if using), and chopped pecans.

3. Chill the dough

  • Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour (or up to overnight). This helps the cookies bake up thick and chewy.

4. Bake the cookies

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Scoop the chilled dough into balls (about 2 tablespoons each) and place them on the prepared baking sheets, spacing them 2 inches apart.
  3. Bake for 10–12 minutes, or until the edges are golden brown and the centers are slightly soft.
