Mashed Potato Cups are a fun and delicious way to serve leftover mashed potatoes. Baked in muffin tins with cheese and optional toppings, they’re crispy on the outside and creamy inside—perfect for appetizers or sides.

  • 3 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup sour cream
  • 1 egg
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Cooking spray or butter for greasing
  • Optional toppings: bacon bits, chives, extra cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray or butter.
  2. In a large bowl, mix mashed potatoes, 3/4 cup cheddar cheese, sour cream, egg, green onions, salt, and pepper until well combined.
  3. Spoon the mixture evenly into the muffin tin, filling each cup to the top and smoothing the surface.
  4. Sprinkle the remaining 1/4 cup of cheese on top of each cup.
  5. Bake for 25–30 minutes, or until the tops are golden brown and slightly crispy.
  6. Let cool for 5 minutes before removing from the muffin tin. Serve warm, topped with bacon bits or extra green onions if desired.

Notes

  • Perfect use for leftover mashed potatoes from holidays or dinners.
  • Add crumbled bacon or diced ham to the mixture for extra flavor.
  • Can be frozen and reheated for a quick snack or side dish.
