These homemade McGriddle Muffins replicate the sweet and savory magic of McDonald’s McGriddles. Featuring fluffy pancake-like muffins infused with maple syrup, layered with sausage, egg, and cheese, these sandwiches are perfect for breakfast or brunch.

  • For the pancake muffins:
    • 1 cup (125 g) all-purpose flour
    • 1 tablespoon sugar
    • 1 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 3/4 cup (180 ml) buttermilk
    • 1 large egg
    • 1 tablespoon melted butter
    • 2 tablespoons maple syrup
  • For the filling:
    • 4 sausage patties (store-bought or homemade)
    • 4 large eggs
    • 4 slices American cheese
    • 2 tablespoons butter (for cooking)


Instructions

  1. Prepare the pancake muffins:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, combine the buttermilk, egg, melted butter, and maple syrup. Stir the wet ingredients into the dry ingredients until just combined; do not overmix.
  2. Cook the pancake muffins:
    • Heat a nonstick skillet or griddle over medium heat. Grease lightly with butter or cooking spray.
    • Pour about 1/4 cup of batter for each pancake muffin onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and the edges are set, then flip and cook for another 1-2 minutes until golden. Repeat with the remaining batter to make 8 muffins. Set aside.
  3. Cook the sausage:
    • In the same skillet, cook the sausage patties over medium heat until browned and fully cooked, about 3-4 minutes per side. Transfer to a plate and keep warm.
  4. Prepare the eggs:
    • Lightly whisk each egg in a bowl and season with salt and pepper. Heat a small, greased skillet and pour in the egg. Cook gently, flipping once, until fully set. Repeat for all 4 eggs, shaping them into circles for the sandwiches.
  5. Assemble the McGriddles:
    • Place one pancake muffin on a plate. Top with a sausage patty, cooked egg, and a slice of cheese. Add another pancake muffin on top.
  6. Serve:
    • Serve warm, with extra maple syrup for drizzling if desired.


Notes

  • For a more authentic maple flavor, add maple crystals (found in specialty stores) to the pancake batter.
  • Use bacon or ham instead of sausage for variety.
