This Meatloaf Grilled Cheese takes comfort food to a whole new level! Thick, juicy slices of savory meatloaf are layered between buttery, crispy bread and melty cheese, creating the ultimate mashup of two classic favorites. It’s perfect for using up leftover meatloaf or making something extra special for dinner or lunch.

Ingredients

  • 4 slices of leftover meatloaf (about 1/2-inch thick)
  • 8 slices of bread (sourdough, brioche, or thick sandwich bread)
  • 4 tablespoons unsalted butter, softened
  • 4 slices cheddar cheese
  • 4 slices provolone or mozzarella cheese
  • 1/4 cup (60 ml) ketchup (optional, for spreading)
  • 1 teaspoon garlic powder (optional, for added flavor)
  • 1 teaspoon Worcestershire sauce (optional, to mix with ketchup for a tangy kick)

Instructions

1. Prepare the meatloaf

  1. If your meatloaf is cold, reheat the slices in a skillet over medium heat for 2–3 minutes per side until warmed through. You can also warm them in the microwave.

2. Assemble the sandwiches

  1. Spread softened butter evenly on one side of each slice of bread. Sprinkle the buttered sides with a little garlic powder for added flavor (optional).
  2. On the non-buttered side of 4 bread slices, layer:
    • 1 slice of cheddar cheese
    • 1 warm meatloaf slice
    • 1 slice of provolone or mozzarella cheese
  3. Spread a thin layer of ketchup (or ketchup mixed with Worcestershire sauce) on the inside of the remaining bread slices, if desired.
  4. Place the remaining bread slices on top, buttered-side up.

3. Grill the sandwiches

  1. Heat a large skillet or griddle over medium heat.
  2. Place the sandwiches in the skillet and cook for 3–4 minutes per side, or until the bread is golden brown and crispy and the cheese is melted. Press down gently with a spatula for even browning.
  3. If the bread is browning too quickly, reduce the heat to low to allow the cheese to melt fully.

4. Serve

  1. Slice the sandwiches in half and serve immediately. Pair with a side of tomato soup, coleslaw, or pickles for a classic, comforting meal.
