1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1/4 cup grated onion
1 large egg
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
For topping:
1/4 cup ketchup
1 tbsp brown sugar
1 tsp mustard
Instructions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with silicone liners.
In a large bowl, combine ground beef, breadcrumbs, milk, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined — do not overmix.
Divide the meat mixture evenly among the muffin cups, pressing gently to fill each cup.
In a small bowl, mix together topping ketchup, brown sugar, and mustard. Spoon a little over each meatloaf muffin.
Bake for 20–25 minutes, or until internal temperature reaches 160°F (71°C).
Let cool for 5 minutes before removing from the muffin tin. Serve warm.
Notes
Use ground turkey or chicken for a leaner option.
These freeze well — reheat in the microwave or oven as needed.
Add finely chopped vegetables like carrots or bell peppers for extra nutrition.
