Meatloaf Muffins are individual-sized portions of classic meatloaf baked in a muffin tin. They’re quick-cooking, easy to serve, and perfect for meal prep, kids, or weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup grated onion
  • 1 large egg
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For topping:
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with silicone liners.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined — do not overmix.
  3. Divide the meat mixture evenly among the muffin cups, pressing gently to fill each cup.
  4. In a small bowl, mix together topping ketchup, brown sugar, and mustard. Spoon a little over each meatloaf muffin.
  5. Bake for 20–25 minutes, or until internal temperature reaches 160°F (71°C).
  6. Let cool for 5 minutes before removing from the muffin tin. Serve warm.

Notes

  • Use ground turkey or chicken for a leaner option.
  • These freeze well — reheat in the microwave or oven as needed.
  • Add finely chopped vegetables like carrots or bell peppers for extra nutrition.
