A classic, hearty meatloaf recipe featuring a tender, flavorful beef mixture topped with a sweet and tangy brown sugar glaze for the perfect comfort food dinner.

  • 1 1/2 lbs ground beef
  • 1 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 1/4 cup chopped green bell pepper (optional)
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 tbsp mustard

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan or baking dish.
  2. In a large bowl, combine ground beef, milk, egg, onion, bell pepper, garlic powder, salt, pepper, breadcrumbs, and Worcestershire sauce. Mix until just combined.
  3. Shape the meat mixture into a loaf and place in the prepared pan.
  4. In a small bowl, mix together ketchup, brown sugar, and mustard to make the glaze.
  5. Spread half of the glaze over the top of the meatloaf.
  6. Bake for 45 minutes, then spread the remaining glaze over the loaf.
  7. Return to oven and bake an additional 15 minutes, or until internal temperature reaches 160°F (71°C).
  8. Let rest 10 minutes before slicing and serving.

Notes

  • Use a mix of ground beef and pork for a richer flavor.
  • Substitute panko for breadcrumbs for a lighter texture.
  • Leftovers make great meatloaf sandwiches.
  • Add crushed red pepper flakes to the glaze for a spicy kick.
