Mediterranean Baked Cod is a light and flavorful dish featuring tender cod fillets baked with cherry tomatoes, olives, garlic, and herbs. It’s a healthy, low-carb meal perfect for a quick and elegant dinner.

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley and lemon wedges for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Place cod fillets in the baking dish and drizzle with 1 tablespoon of olive oil and lemon juice. Season with salt and pepper.
  3. In a bowl, combine cherry tomatoes, olives, red onion, garlic, oregano, thyme, and remaining olive oil. Toss to coat.
  4. Spoon the tomato mixture evenly around and on top of the cod fillets.
  5. Bake for 15–18 minutes, or until the cod is opaque and flakes easily with a fork.
  6. Garnish with fresh parsley and serve with lemon wedges if desired.

Notes

  • Use other white fish like haddock or halibut if cod is unavailable.
  • Add capers for extra briny flavor.
  • Serve with couscous, rice, or roasted vegetables.
