This Mediterranean Chicken is juicy, flavorful, and infused with garlic, lemon, and herbs. It’s pan-seared or baked, making it an easy weeknight dinner or meal prep favorite! Serve it with rice, couscous, or roasted vegetables for a healthy meal.

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon oregano (or Italian seasoning)
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice

For Garnish:

  • ½ cup cherry tomatoes, halved
  • ¼ cup crumbled feta cheese
  • ¼ cup kalamata olives, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix olive oil, lemon juice, zest, garlic, and spices.
  2. Coat the chicken in the marinade and let it sit for at least 15 minutes (or overnight for deeper flavor).

Step 2: Cook the Chicken

Pan-Seared Method:

  1. Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  2. Cook chicken for 5-6 minutes per side, until golden brown and cooked through.

Baking Method:

  1. Preheat oven to 400°F (200°C).
  2. Place chicken in a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).

Step 3: Garnish & Serve

  1. Sprinkle with feta cheese, cherry tomatoes, olives, and fresh parsley.
  2. Serve warm with couscous, rice, or pita bread.

Notes
