Mediterranean Salad is a refreshing and vibrant mix of crisp vegetables, olives, feta cheese, and a zesty olive oil dressing, perfect as a light meal or side dish.

Ingredients

  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle with chopped parsley and serve immediately or chill for 30 minutes before serving.

Notes

  • Use English cucumber for fewer seeds and thinner skin.
  • Add grilled chicken or chickpeas for extra protein.
  • Can be stored in the fridge for up to 2 days.
