Ingredients

Scale

  • For the Cookies:
    • 1 cup (227g) unsalted butter, softened
    • 1½ cups (300g) granulated sugar
    • 1 large egg
    • ½ cup (120ml) eggnog
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground nutmeg
    • 3 cups (375g) all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon salt
  • For the Optional Glaze:
    • 1 cup (120g) powdered sugar
    • 23 tablespoons eggnog
    • ¼ teaspoon ground nutmeg
    • ¼ teaspoon rum extract (optional)

Instructions

  • Prepare the Dough:
    • In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
    • Beat in the egg, eggnog, vanilla extract, and ground nutmeg until well combined.
  • Combine Dry Ingredients:
    • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  • Shape and Bake:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Roll the dough into 1-inch (2.5 cm) balls and place them on the prepared baking sheet, spacing them about 2 inches (5 cm) apart.
    • Gently flatten each ball with the bottom of a glass or your fingers to ensure even baking.
    • Bake for 8–10 minutes, or until the edges are just beginning to turn golden brown.
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Optional Glaze:
    • In a small bowl, whisk together the powdered sugar, eggnog, ground nutmeg, and rum extract (if using) until smooth.
    • Drizzle the glaze over the cooled cookies and let it set before serving.

Notes
