A deliciously hearty Mexican casserole filled with layers of seasoned ground meat, beans, cheese, and tortillas, baked to perfection for a comforting and flavorful meal.

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies (optional, for extra heat)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Mexican blend cheese
  • 8 flour tortillas (corn tortillas can be used for a gluten-free version)
  • 1/2 cup chopped cilantro (for garnish)
  • Olive oil (for greasing)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet, cook ground beef over medium heat, breaking it apart as it cooks. Add the chopped onion and garlic, cooking until softened and fragrant, about 5 minutes.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and green chilies. Season with salt and pepper to taste. Let the mixture simmer for 5-7 minutes, allowing the flavors to combine.
  4. Layer the bottom of the prepared baking dish with 4 flour tortillas, cutting them to fit the pan if needed. Top with half of the beef mixture and half of the sour cream.
  5. Repeat the layers with the remaining tortillas, beef mixture, and sour cream. Sprinkle the shredded cheddar and Mexican blend cheese evenly on top.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly. If you want a golden, crispy top, broil for an additional 2-3 minutes, watching closely.
  7. Remove from the oven and let it rest for 5 minutes before slicing. Garnish with fresh cilantro and serve with a side of guacamole or salsa.

Notes

  • You can substitute the ground beef with ground turkey or chicken for a leaner version.
  • Add jalapeños or green chilies for a spicier kick.
  • If you prefer a vegetarian version, use black beans and corn, omitting the meat.
  • Can be made ahead of time and refrigerated before baking. Just bake for 30-35 minutes when ready to serve.
