A flavorful Mexican-inspired chicken dish topped with a rich and creamy cheese sauce, perfect for a hearty and satisfying meal.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 1/4 cup diced green chilies
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken breasts with olive oil, cumin, chili powder, garlic powder, salt, and pepper.
  3. Place chicken in a baking dish and bake for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
  4. While the chicken is baking, melt butter in a saucepan over medium heat.
  5. Whisk in flour and cook for 1 minute to form a roux.
  6. Gradually whisk in milk and cook, stirring constantly, until the sauce thickens, about 3-5 minutes.
  7. Add cheddar cheese, Monterey Jack cheese, and diced green chilies to the sauce. Stir until the cheese is melted and the sauce is smooth.
  8. Remove chicken from the oven and spoon the cheese sauce over each breast.
  9. Garnish with fresh cilantro if desired and serve hot.

Notes

  • You can substitute chicken thighs if preferred.
  • Adjust chili powder to your heat preference.
  • Serve with rice, tortillas, or steamed vegetables for a complete meal.
