- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1/4 cup diced green chilies
- Fresh cilantro for garnish (optional)
- Preheat oven to 375°F (190°C).
- Rub chicken breasts with olive oil, cumin, chili powder, garlic powder, salt, and pepper.
- Place chicken in a baking dish and bake for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
- While the chicken is baking, melt butter in a saucepan over medium heat.
- Whisk in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk and cook, stirring constantly, until the sauce thickens, about 3-5 minutes.
- Add cheddar cheese, Monterey Jack cheese, and diced green chilies to the sauce. Stir until the cheese is melted and the sauce is smooth.
- Remove chicken from the oven and spoon the cheese sauce over each breast.
- Garnish with fresh cilantro if desired and serve hot.
