Mexican Pinwheels are a colorful and zesty appetizer made with tortillas, a creamy spiced filling, and fresh veggies. These no-bake bites are perfect for parties, potlucks, or a quick snack.

Ingredients

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or thawed frozen)
  • 1/2 red bell pepper, finely diced
  • 1/4 cup green onions, chopped
  • 1/4 cup chopped cilantro
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine cream cheese, sour cream, shredded cheese, taco seasoning, salt, and pepper. Mix until smooth.
  2. Fold in black beans, corn, bell pepper, green onions, and cilantro.
  3. Lay out the tortillas and evenly spread the filling across each one.
  4. Tightly roll up each tortilla and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour.
  5. Remove from fridge, unwrap, and slice into 1-inch pinwheels.
  6. Arrange on a serving platter and serve chilled.

Notes

  • To make it spicier, add diced jalapeños or a dash of hot sauce to the filling.
  • Can be prepared a day in advance and stored in the fridge.
  • Use whole wheat or spinach tortillas for added nutrition and color.
