  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin (optional, for extra flavor)
  • 1 small jalapeño, finely diced (optional, for heat)
  • Salt, to taste
  • Fresh cilantro or diced tomatoes for garnish (optional)

Instructions

  1. Make the Base:
    • In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly, to create a roux.
  2. Add the Milk:
    • Gradually whisk in the milk, a little at a time, ensuring it’s smooth after each addition. Continue cooking and stirring until the mixture thickens slightly (about 2-3 minutes).
  3. Melt the Cheese:
    • Reduce the heat to low and stir in the white American cheese and Monterey Jack cheese. Stir constantly until the cheese is fully melted and the mixture is smooth.
  4. Season the Dip:
    • Add the garlic powder, onion powder, cumin (if using), and diced jalapeño (if desired). Taste and adjust the seasoning with salt as needed.
  5. Serve:
    • Transfer the cheese dip to a serving bowl and garnish with fresh cilantro, diced tomatoes, or additional jalapeño slices if desired. Serve warm with tortilla chips.

Notes

  • Cheese Options: White American cheese is key for the smooth texture, and Monterey Jack adds extra flavor. You can use Velveeta or queso blanco as substitutes if needed.
  • Heat Level: For a milder dip, omit the jalapeños. For more heat, add a pinch of cayenne pepper or diced green chilies.
