Mexican Street Corn Dip

A creamy, cheesy, and flavorful dip inspired by Mexican street corn (Elote), perfect for parties and gatherings.

Ingredients

  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 tbsp vegetable oil
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese, crumbled (or feta as substitute)
  • 1 jalapeño, finely diced
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • Salt and black pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the corn and cook until slightly charred, about 5-7 minutes, stirring occasionally.
  2. Transfer the corn to a large mixing bowl and let it cool slightly.
  3. Add mayonnaise, sour cream, crumbled cotija cheese, diced jalapeño, chili powder, smoked paprika, lime juice, and chopped cilantro to the corn. Mix well to combine.
  4. Season with salt and black pepper to taste.
  5. Transfer to a serving bowl, garnish with extra cheese, cilantro, and a sprinkle of chili powder if desired.
  6. Serve warm or at room temperature with tortilla chips.

Notes

  • Char the corn for extra smoky flavor; a grill or broiler works too.
  • Adjust the spice level by adding more or less jalapeño.
  • Great served warm or chilled — make ahead for easy entertaining.
