Ingredients

Scale
  • For the Cupcakes:
    • 1 ½ cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ cup unsalted butter, softened
    • ¾ cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • ½ cup milk
    • ¼ cup sour cream
  • For the Frosting:
    • 1 cup unsalted butter, softened
    • 3 cups powdered sugar
    • 2–3 tablespoons heavy cream or milk
    • 1 teaspoon vanilla extract
    • Red and green gel food coloring
  • For Decoration:
    • Mini Oreo cookies (for Mickey ears)
    • Holiday sprinkles
    • Edible glitter (optional)

Instructions

  1. Make the Cupcakes:
    • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with festive cupcake liners.
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large bowl, cream the butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Mix in the dry ingredients alternately with the milk and sour cream, beginning and ending with the dry ingredients. Do not overmix.
    • Divide the batter evenly among the cupcake liners, filling each about ¾ full.
    • Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely before frosting.
  2. Prepare the Frosting:
    • Beat the butter in a large bowl until smooth. Gradually add powdered sugar, mixing until combined.
    • Add vanilla extract and heavy cream, beating until the frosting is fluffy and pipeable. Adjust the consistency with more powdered sugar or cream as needed.
    • Divide the frosting into two bowls. Tint one batch red and the other green using gel food coloring.
  3. Decorate the Cupcakes:
    • Pipe the frosting onto the cooled cupcakes using a star or round tip, alternating red and green for festive variety.
    • Place two mini Oreos on top of each cupcake to create Mickey Mouse ears.
    • Add holiday sprinkles and edible glitter for extra sparkle.
  4. Serve:
    • Display your Mickey Mouse Christmas Cupcakes on a festive platter and enjoy the magic!
