  • 4 oz (115 g) cream cheese, softened
  • 1/4 cup (30 g) dried cranberries, finely chopped
  • 1/4 cup (30 g) pecans, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon honey (optional, for added sweetness)

For serving:

  • Crackers or crostini
  • Fresh veggies like celery or carrot sticks

Instructions

  1. Prepare the cheese mixture:
    • In a medium mixing bowl, combine the goat cheese, cream cheese, and honey (if using). Mix until smooth and creamy. Chill in the refrigerator for 20-30 minutes to firm up for easier rolling.
  2. Make the coating:
    • In a shallow bowl or plate, combine the chopped cranberries, pecans, parsley, and chives. Mix well.
  3. Shape the cheese balls:
    • Scoop about 1 tablespoon of the cheese mixture and roll it into a small ball. Repeat with the remaining cheese mixture. You should have about 12 mini balls.
  4. Coat the cheese balls:
    • Roll each cheese ball in the cranberry-pecan-herb mixture until evenly coated. Gently press the coating onto the cheese balls to help it stick.
  5. Serve or chill:
    • Arrange the cheese balls on a serving platter and serve immediately, or refrigerate for up to 24 hours. Let them sit at room temperature for 10-15 minutes before serving.
