1 cup graham cracker crumbs
3 tbsp granulated sugar
4 tbsp unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
2 tbsp lime juice
1 tbsp tequila
1 tbsp orange liqueur (like triple sec)
1 tsp lime zest
2 large eggs
Whipped cream and lime slices for garnish (optional)
Instructions
Preheat the oven to 325°F (160°C) and line a muffin pan with paper liners.
In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
Press about 1 tablespoon of the crumb mixture into the bottom of each liner and bake for 5 minutes; set aside.
In a large bowl, beat cream cheese until smooth and creamy.
Add sugar, lime juice, tequila, orange liqueur, and lime zest; beat until combined.
Beat in eggs one at a time, mixing just until blended.
Spoon the filling evenly over the crusts in the muffin pan.
Bake for 18-20 minutes, until centers are set but still slightly jiggly.
Cool completely in the pan, then refrigerate for at least 2 hours before serving.
Top with whipped cream and lime slices if desired.
Notes
For a non-alcoholic version, substitute tequila and orange liqueur with extra lime juice and orange juice.
Use room-temperature ingredients to prevent lumps in the batter.
