Mini Margarita Cheesecakes are a fun, bite-sized dessert bursting with lime flavor, a hint of tequila, and a buttery graham cracker crust, perfect for parties and celebrations.

  • 1 cup graham cracker crumbs
  • 3 tbsp granulated sugar
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp lime juice
  • 1 tbsp tequila
  • 1 tbsp orange liqueur (like triple sec)
  • 1 tsp lime zest
  • 2 large eggs
  • Whipped cream and lime slices for garnish (optional)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin pan with paper liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press about 1 tablespoon of the crumb mixture into the bottom of each liner and bake for 5 minutes; set aside.
  4. In a large bowl, beat cream cheese until smooth and creamy.
  5. Add sugar, lime juice, tequila, orange liqueur, and lime zest; beat until combined.
  6. Beat in eggs one at a time, mixing just until blended.
  7. Spoon the filling evenly over the crusts in the muffin pan.
  8. Bake for 18-20 minutes, until centers are set but still slightly jiggly.
  9. Cool completely in the pan, then refrigerate for at least 2 hours before serving.
  10. Top with whipped cream and lime slices if desired.

Notes

  • For a non-alcoholic version, substitute tequila and orange liqueur with extra lime juice and orange juice.
  • Use room-temperature ingredients to prevent lumps in the batter.
