  • 12 chocolate sandwich cookies (like Oreos), for crust
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup quick oats
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&Ms
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (163°C). Line a 12-cup muffin tin with paper liners and place one chocolate sandwich cookie in the bottom of each cup.
  2. In a large bowl, beat cream cheese until smooth. Add peanut butter, granulated sugar, and brown sugar and mix until combined.
  3. Beat in eggs, one at a time, followed by vanilla extract and a pinch of salt.
  4. Fold in oats, mini chocolate chips, and mini M&Ms.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 20–22 minutes, or until centers are set and tops look slightly puffed.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Chill in the refrigerator for at least 2 hours before serving.
