These Mini Pancakes (also known as “silver dollar pancakes”) are adorable, fluffy, and bite-sized versions of classic pancakes. Perfect for breakfast, brunch, or even a fun snack, they’re easy to make and can be customized with your favorite toppings!

For the Pancakes:

  • 1 cup (125 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (180 ml) milk (or buttermilk for extra fluffiness)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (plus extra for greasing the pan)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Batter:
    • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
    • Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix; the batter should be slightly lumpy.
  2. Heat the Pan:
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  3. Cook the Pancakes:
    • Using a teaspoon or small cookie scoop, pour small dollops of batter onto the skillet to form mini pancakes (about 1-2 inches in diameter).
    • Cook for about 1-2 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1 minute, until golden brown.
  4. Serve:
    • Transfer the pancakes to a serving plate and keep warm while you cook the remaining batter.
    • Serve with your favorite toppings like syrup, powdered sugar, fresh fruit, or whipped cream.
