These Mini Pancake Sausage Bites are the perfect grab-and-go breakfast treat. Bite-sized pancakes wrapped around juicy sausage links make for a fun and delicious morning meal, ideal for kids or brunch parties.

  • 1 cup (125 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (180 ml) milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 12 fully cooked breakfast sausage links
  • Maple syrup (for dipping, optional)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Grease a mini muffin tin generously with cooking spray or butter.
  2. Prepare the pancake batter:
    • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, mix the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).
  3. Assemble the bites:
    • Cut each sausage link in half to fit the mini muffin tin.
    • Spoon about 1 tablespoon of pancake batter into each muffin cup, filling about halfway. Place a piece of sausage in the center of each cup, then add a small dollop of batter on top to cover the sausage partially.
  4. Bake:
    • Bake for 12-15 minutes, or until the pancake bites are golden brown and a toothpick inserted into the batter comes out clean.
  5. Serve:
    • Let the bites cool for 5 minutes before removing them from the tin. Serve warm with maple syrup for dipping.

Notes

  • Substitute sausage with turkey sausage or veggie links for a healthier option.
  • These bites can be made ahead and frozen. Reheat in the microwave or oven for a quick breakfast.
