Ingredients
Scale
1 box brownie mix (plus ingredients listed on the box)
For the mint layer:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tbsp milk
1/2 tsp peppermint extract
Green food coloring (optional)
For the chocolate ganache:
1 cup semi-sweet chocolate chips
1/4 cup heavy cream
Instructions
Preheat oven and prepare brownies according to package directions in a 9×13-inch pan. Let cool completely.
For the mint layer, beat together butter, powdered sugar, milk, and peppermint extract until smooth and fluffy. Add green food coloring if desired.
Spread mint frosting evenly over the cooled brownies. Refrigerate for 20–30 minutes to set.
To make the ganache, heat cream in a small saucepan or microwave until just simmering. Pour over chocolate chips in a bowl and let sit for 2–3 minutes, then stir until smooth.
Spread the ganache over the mint layer and refrigerate again for at least 30 minutes before slicing.
Cut into squares and serve chilled or at room temperature.
Notes
Use homemade brownie batter for an even richer base.
Adjust mint extract to taste — it’s strong, so start with less if unsure.
Store in an airtight container in the fridge for up to 5 days.
