Ingredients

Scale
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup natural peanut butter (creamy or chunky)
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips
  • 1/4 cup mini candy-coated chocolates (e.g., mini M&M’s)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Optional Add-Ins:

  • 1 tablespoon chia seeds or flaxseeds (for added nutrition)
  • 1/4 cup shredded coconut

Instructions

  1. Combine Ingredients:
    • In a large bowl, mix the oats, peanut butter, honey, chocolate chips, candy-coated chocolates, vanilla extract, and salt until the mixture is well combined.
  2. Chill the Mixture:
    • Refrigerate the mixture for 20–30 minutes to firm up, making it easier to roll into balls.
  3. Roll into Balls:
    • Using your hands or a small cookie scoop, form the mixture into 1-inch balls.
  4. Store and Enjoy:
    • Place the energy balls in an airtight container and store them in the refrigerator for up to 1 week or in the freezer for up to 3 months.

Notes

  • For a nut-free version, replace peanut butter with sunflower seed butter.
  • Adjust sweetness by adding more or less honey/maple syrup.
  • You can swap the mini candies with dried fruit or nuts for a healthier variation.
