This classic pecan log is a simple and delightful treat made with only three ingredients. Perfect for the holidays, gifting, or when you want a quick, sweet snack.

  • 1 jar (7 oz / 200g) marshmallow cream (marshmallow fluff)
  • 1 bag (11 oz / 300g) caramel candies, unwrapped
  • 2 cups (250g) finely chopped pecans

Instructions

  1. Prepare Your Work Area:
    • Line a baking sheet with parchment paper or a silicone baking mat. Spread the chopped pecans on a plate or shallow dish for easy coating.
  2. Shape the Marshmallow Center:
    • Scoop the marshmallow cream onto a piece of parchment paper. Shape it into a log about 8-10 inches long. Place the log in the freezer for 15-20 minutes to firm up.
  3. Melt the Caramel:
    • In a microwave-safe bowl or a double boiler, melt the caramel candies until smooth, stirring frequently to prevent burning. Let the melted caramel cool slightly—it should still be warm but not so hot that it melts the marshmallow log.
  4. Coat the Log:
    • Remove the marshmallow log from the freezer. Using a spatula or your hands, coat the log evenly with the melted caramel. Work quickly, as the caramel will start to set.
  5. Roll in Pecans:
    • Immediately roll the caramel-coated log in the chopped pecans, pressing gently to ensure the nuts adhere well.
  6. Chill and Slice:
    • Place the pecan log back on the parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
    • Slice into ½-inch rounds and serve.
