These No-Bake Brownie Bars are rich, fudgy, and made with wholesome ingredients. Perfect for a quick dessert or snack, these bars are loaded with chocolate flavor and require no oven time. They’re vegan, gluten-free, and easily customizable with your favorite toppings!

  • 1 1/2 cups pitted Medjool dates (softened if needed)
  • 1 cup raw walnuts or almonds
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup almond butter (or peanut butter)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips (optional)

Topping (Optional):

  • 2 tablespoons melted dark chocolate
  • Chopped nuts or shredded coconut for garnish

Instructions

  1. Prepare the Dates:
    • If the dates are not soft, soak them in warm water for 10 minutes. Drain and pat dry.
  2. Blend the Nuts:
    • In a food processor, pulse the walnuts (or almonds) until finely ground, but not too much to turn into nut butter.
  3. Make the Dough:
    • Add the dates, cocoa powder, almond butter, vanilla extract, and salt to the food processor. Blend until the mixture forms a sticky dough. If the mixture is too dry, add 1–2 teaspoons of water.
  4. Add Chocolate Chips (Optional):
    • If using, fold the mini chocolate chips into the dough by hand.
  5. Press into a Pan:
    • Line an 8×8-inch baking dish with parchment paper. Press the dough evenly into the pan, smoothing the top with your hands or a spatula.
  6. Add Toppings (Optional):
    • Drizzle melted chocolate over the bars and sprinkle with chopped nuts or shredded coconut if desired.
  7. Chill:
    • Refrigerate the bars for at least 1 hour, or until firm.
  8. Cut and Serve:
    • Remove from the pan, slice into bars, and enjoy! Store leftovers in the refrigerator or freezer.

Notes

  • For a nut-free version, substitute the walnuts/almonds with sunflower seeds and almond butter with sunflower seed butter.
  • These bars are freezer-friendly and can be stored for up to 3 months.
  • You can substitute the dates with dried figs or prunes for a different flavor.
