These No-Bake Funfetti Cookie Dough Bites are a colorful, sweet treat perfect for parties or a quick dessert fix. Made with edible cookie dough and packed with rainbow sprinkles, they’re as fun to eat as they are to make—no oven required!

  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup (125 g) all-purpose flour (heat-treated, see notes)
  • 2 tablespoons milk or heavy cream
  • 1/4 cup (50 g) rainbow sprinkles (plus extra for rolling, optional)


Instructions

  1. Heat-treat the flour:
    • Spread the flour on a baking sheet and bake at 350°F (175°C) for 5 minutes, or microwave in 30-second intervals, stirring in between, until the flour reaches 165°F (74°C). Let cool completely before using.
  2. Mix the dough:
    • In a large bowl, beat the softened butter, granulated sugar, and brown sugar with a hand mixer on medium speed until light and fluffy (about 2-3 minutes).
    • Add the vanilla extract and salt, and mix until combined.
  3. Add the dry ingredients:
    • Gradually mix in the heat-treated flour. Add the milk, 1 tablespoon at a time, until the dough reaches a soft, pliable consistency.
  4. Add the sprinkles:
    • Fold in the rainbow sprinkles gently to evenly distribute.
  5. Shape the bites:
    • Scoop tablespoon-sized portions of dough and roll them into balls with your hands. If desired, roll the bites in extra sprinkles for a festive finish.
  6. Chill and serve:
    • Place the cookie dough bites on a parchment-lined baking sheet and refrigerate for 20-30 minutes to firm up. Serve chilled or at room temperature.

Notes

  • Heat-treating flour: This step ensures the flour is safe to eat raw. Don’t skip it!
  • Storage: Store cookie dough bites in an airtight container in the refrigerator for up to 1 week.
  • Freezing: Freeze the bites in a single layer, then transfer to a freezer-safe bag for up to 3 months. Thaw in the refrigerator before serving.
