No Bake Mini Cheesecake Parfaits are easy, layered desserts made with a buttery graham cracker crust, creamy cheesecake filling, and fresh fruit or pie filling, served in individual cups for perfect party portions.

Ingredients

  • 1 cup graham cracker crumbs
  • 3 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh berries or fruit pie filling (strawberry, blueberry, or cherry)

Instructions

  1. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Set aside.
  2. In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Fold into the cream cheese mixture until fully incorporated.
  4. Spoon a layer of graham cracker mixture into the bottom of small dessert cups or jars.
  5. Add a layer of cheesecake filling, followed by a layer of fruit or pie filling.
  6. Repeat layers if desired. Chill for at least 1 hour before serving.

Notes

  • Use a piping bag for cleaner layers.
  • Can be made a day ahead and stored in the refrigerator.
  • Top with extra fruit or whipped cream before serving if desired.
