1/2 cup (125g) unsalted butter
1/3 cup (80ml) golden syrup or treacle
1/4 cup (50g) brown sugar
1/2 teaspoon vanilla extract
1 1/2 cups (135g) rolled oats
1/2 cup (40g) shredded coconut
1/2 cup (75g) mixed chopped nuts (almonds, peanuts, walnuts, etc.)
1/4 cup (40g) chopped dried fruit (like raisins or dates) – optional
Pinch of salt
Line an 8×8 inch (20×20 cm) baking pan with parchment paper.
In a medium saucepan over low heat, melt the butter, treacle (or golden syrup), and brown sugar together until smooth and bubbling slightly.
Remove from heat and stir in vanilla extract.
In a large bowl, mix oats, coconut, chopped nuts, dried fruit (if using), and a pinch of salt.
Pour the warm treacle mixture over the dry ingredients and stir until well combined and coated.
Press the mixture firmly into the prepared pan using a spatula or the back of a spoon.
Chill in the fridge for at least 2 hours or until firm.
Slice into bars or squares and store in an airtight container in the fridge.
